Winter mushroom (Flammulina velutipes)
The winter mushroom was named after its fruiting bodies development at low temperatures. Fruiting bodies often freeze in winter and continue to grow when thawing.
As many other mushroom species the winter mushrooms are very popular food in Far East, especially in China where they cultivate them to get the fruiting bodies with long stems and small caps.

Cultivation on wood
When cultivated outside mushrooms form in clusters. Wood can be inoculated with plug or grain spawn. For cultivation the appropriate types of wood are: beech, maple, poplar, willow and alder. Some strains can be also cultivated on conifers.
Mushrooms should be harvested before the caps fully expand and white spores are released.
