· Cut the tough, woody stems from the oyster mushrooms with a knife. Discard the stems or save them for later use in a stock.
· Dampen a clean cloth or paper towel with a small amount of water. Wipe the mushroom caps and gills gently to remove any dirt. If the oyster mushrooms are very dirty, rinse them quickly under cool running water.
· Dry the oyster mushrooms immediately with clean paper towels.
