Winter mushroom (Flammulina velutipes)
The winter mushroom was named after its fruiting bodies development at low temperatures. Fruiting bodies often freeze in winter and continue to grow when thawing.
As many other mushroom species the winter mushrooms are very popular food in Far East, especially in China where they cultivate them to get the fruiting bodies with long stems and small caps. 
Cultivation on wood
When cultivated outside mushrooms form in clusters. Wood can be inoculated with plug or grain spawn. For cultivation the appropriate types of wood are: beech, maple, poplar, willow and alder. Some strains can be also cultivated on conifers. Mushrooms should be harvested before the caps fully expand and white spores are released.

تاثیر قارچ Cordyceps militaris روی تیپ دو دیابت در موش
Abstract
Controlling hyperglycemia and dyslipidemia is associated with reduced risks for diabetic complications. The present study examined the effect of dongchunghacho (Cordyceps militaris; CM) on hyperglycemia and dyslipidemia in an animal model of type 2 diabetes. Fiveweek-old db/db mice were fed an AIN-93G diet or a diet containing 1% CM water extract, whereas db/+ mice were offered the AIN-93G diet for 6 weeks. Consumption of CM significantly decreased blood glycated hemoglobin and serum glucose levels, as well as homeostasis model assessment for insulin resistance (HOMA-IR), in db/db mice. CM significantly lowered serum triglyceride and total cholesterol levels, and increased HDL-cholesterol level. CM water extract inhibited rat intestinal α-glucosidase, with an IC50 of 182 μg/mL in vitro. These results indicate that CM exerted hypoglycemic and hypolipidemic effects in db/db mice.

Agaricus bisporus fucogalactan: Structural characterization and pharmacological approaches
The fucogalactan from A. bisporus (EFP-Ab) obtained on aqueous extraction followed by purification had Mw 37.1x104 g.mol−1 relative to a (1→6)-linked α-D-Galp main-chain partially methylated at HO-3, and partially substituted at O-2 by nonreducing end-units of α-L-Fucp or β-D-Galp. EFP-Ab also inhibited significantly the neurogenic and inflammatory phases of formalin-induced licking, however, the antinociceptive effect was more pronounced against the inflammatory phase with ID50 of 36.0 (25.8–50.3) mg.kg−1. In addition, EFP-Ab decreased the lethality induced by CLP. Its administration reduced the late mortality rate by 40%, prevented neutrophil accumulation in lungs and markedly decreased iNOS and COX-2 protein expression by ileum cells. These data show for the first time that EFP-Ab has significant anti-sepsis, antinociceptive and anti-inflammatory actions, which seems to be related to the decreased iNOS and COX-2 expression. Collectively, the present results demonstrate that EFP-Ab could constitute an attractive molecule of interest for the development of new drugs.

Lovastatin is a member of the drug class of statins, used for lowering cholesterol (hypolipidemic agent) in those with hypercholesterolemia and so preventing cardiovascular disease. Lovastatin is a naturally occurring drug found in food such as oyster mushrooms[1] and red yeast rice.[2]
The primary uses of lovastatin is for the treatment of dyslipidemia and the prevention of cardiovascular disease.[3] It is recommended to be used only after other measures such as diet, exercise, and weight reduction have not improved cholesterol levels.[3]

Abstract
Pleurotus tuber-regium is a tuberous wild mushroom species, highly expensive, nutritious, very rich in proteins and known to possess medicinal values. The dwindling forests and the absence of commercial cultivation of this mushroom have resulted in scarcity of the sclerotia. The study was conducted to determine the optimum temperature, pH and light regime for the growth of P. tuber-regium and evaluate the use of water hyacinth (Eichhornia crassipes), plantain (Musa sapiens) leaves, millet (Eleusine coracana) stalk and composted 'wawa' (Triplochiton scleroxylon) sawdust as substrates for its cultivation. Pleurotus tuber-regium grew fastest at 35°C, pH 6 and in continuous darkness. Only plantain leaf substrate produced fruitbodies and sclerotia whilst 'wawa' sawdust produced only sclerotia in bags. Plantain leaves yielded fruitbodies with a Biological Efficiency (B.E) of 54.47% while the sclerotia gave a B.E of 62.05%. The B.E value of 99.65% was obtained from sclerotia of 'wawa' sawdust. The sclerotium had highest crude protein content followed by the pileus and stipe in decreasing order. Knowledge of the growth requirements and the potential substrates will facilitate large scale production and commercialization of the fungus.

In cultivation of button mushroom [Agaricus bisporus
(Lange) Imbach], casing layer that is nutritionally deficient to compost
is believed to trigger the fruit body formation and this is conducted
by the bacterial community residing in casing layer. The change in
nutritional status of the casing is highly correlated with microbial
flora. Therefore, an attempt was made to characterize the bacterial
flora in casing layer, i.e., Farm Yard Manure and Spent Mushroom
Substrate (FYM+SMS, 3:1) and Farm Yard Manure and Vermi Compost (FYM+VC,
3:1), employing phenetic approaches. Morphotypically different and
functionally characterized bacterial isolates were identified by partial
16S rDNA gene fragment sequencing. Available data showed a significant
variety of organisms that included Acinetobacter and Pseudomonas of the γ-proteobacteria, that were most frequently encountered genera. Amongst Gram-positive bacteria, Bacillus
was the most highly represented genus that was derived from the agaric
fruit bodies. In addition, FYM+SMS was found to be a high yielding
casing mixture, which took minimum case run period together with

Biological Characteristics for Mycelial Growth of Agaricus bisporus
The biological characteristics of Agaricus bisporus
mycelia were reported in this study. Biological characteristics of
mycelium growth, including carbon source, nitrogen source,
carbon-nitrogen ratio, temperature, pH and growth regulators, were
investigated. The results indicated that the optimum carbon and nitrogen
sources for mycelial growth were glucose and yeast extract
fermentation, respectively. The optimum carbon-nitrogen ratio of culture
was 20:1~30:1; the optimum temperature was 22~24℃ and the optimum pH
was 7.0~7.5. Analysis of growth regulators revealed that VC and VB1 were essential in promoting the mycelial growth of white button mushrooms.

AbstractUltrasonic technology was applied for polysaccharide extraction from the fruiting bodies of P. eryngii
and response surface methodology (RSM) was used to optimize the effects
of processing parameters on polysaccharide extraction yield. Three
independent variables were extraction time (A), ultrasonic power (B) and
the ratio of solvent to sample (C), respectively. Results showed that
the maximum yield of P. eryngii polysaccharide (PEPS) was
obtained at an optimum condition: extraction time 39 min, ultrasonic
power 517 w, the ratio of water to material 19 mL/g, and the PEPS
extracting yield reached 34.3% under the conditions. PEPS were
precipitated into three crude polysaccharides, PEPS30, PEPS60 and
PEPS80, by different concentration of ethanol respectively. The
antioxidant activities of these three polysaccharides were evaluated.
The results showed that PEPS80 had the best reducing power, DPPH radical
scavenging ability and oxygen radical scavenging ability, followed by

is cultivated at commercial level in Brazil and some Asian countries on
local substrates and casing mixtures. Despite its tropical origin, A. subrufescens
might be a seasonal option for mushroom growers in western countries,
where some wild strains have been isolated. For this purpose,
cultivation conditions were developed starting from the substrate and
casing mixture commonly used for commercial production of the button
mushroom Agaricus bisporus in France. RESULTSThe commercial compost, based on wheat straw and horse manure, used for A. bisporus and the casing mixture (peat and limestone) supplemented with fine sand proved efficient to grow A. subrufescens.
Increasing the depth of the casing layer improved significantly the
yield and time to fruiting. Daily variations in temperature did not
markedly modify the yield. Significantly higher mushroom biomass was
obtained with three wild European strains compared with three Brazilian
cultivars. The very productive wild strain CA438-A gave mushrooms of
size and dry matter content comparable to those of a cultivar. CONCLUSIONCommercial production of A. subrufescens can be developed in western countries on the wheat straw-based substrate commonly used for A. bisporus
in these regions, by a simple modification of the casing mixture and
maintaining the incubation temperature throughout the crop, which is
expected to save energy during summer. Good yields were obtained
cultivating European strains under optimised parameters. © 2013 Society

activity and activities of polyphenol oxidase (PPO), phenylalanine
ammonia lyase (PAL), and peroxidase (POD) were measured. The results
indicated that all essential oils could inhibit the senescence of
mushrooms, and the most effective compound was cinnamaldehyde.
Fumigation treatment with 5 μl l−1 cinnamaldehyde decreased
BI, delayed cap opening, reduced microorganism counts, promoted the
accumulation of phenolics and ascorbic acid. In addition, 5 μl l−1
cinnamaldehyde fumigation treatment inhibited the activities of PPO and
POD, and increased PAL activity during the storage period. Thus,
postharvest essential oil fumigation treatment has positive effects on

Maitake (Grifola frondosa)
was hydrothermally extracted at 4 different temperatures (121, 130,
140, and 150°C) for 30 and 60 min, and the total phenolic content (TPC),
antioxidant activity, and β-glucan content of the extracts was
evaluated. The highest TPC was detected in the extract at 150°C treated
for 60 min with 13.61 mg gallic acid equivalents (GAE)/g. The
antioxidant activity of the maitake extracts, evaluated by determining
DPPH radical scavenging activity (RSA), ABTS RSA, reducing power, and
tyrosinase inhibitory activity increased with increasing treatment
temperature and time. The content of β-glucan was the highest (5.13%) in
the extract prepared at 140°C for 30min. These results suggest that
hydrothermal extraction could be used as a tool to increase the
antioxidant activity of maitake extracts.

Abstract
Production of mushroom is a branch of agriculture intensively
growing in the world and Poland. This production introduces into natural
environment a large spent mushroom substrate waste that requires
utilization. Agricultural and non-agricultural disposal of the spent
mushroom substrate, is possible when it is secured in a suitable manner,
minimizes the risk of transmission of pests, fungi, bacteria, vinises,
and weed seeds. After application into the soil SMS improves its
physical properties and increases the content of macro- and
microelements.

Abstract
Dry bubble (caused by Lecanicillium fungicola)
is a widespread disease of button mushroom. The objective of the
experiments was to determine the efficacy of compost teas made from
spent mushroom substrate (SMS) as a biocontrol method against the
disease. All SMS teas produced in this study significantly inhibited
(100 %) the in vitro mycelial growth of L. fungicola,
whereas the fungicide prochloraz at 50 ppm inhibited growth by 91 %.
The in vivo effectiveness of two SMS aerated teas, one with mineral soil
(MS) and the other with peat (TPT), was evaluated in two mushroom
cropping trials inoculated with L. fungicola.
The results demonstrated that the most effective treatments were those
with TPT applied close to harvest and/or those with the greatest number
of applications. The most efficacious treatments were TPT treatments
(reducing disease by 34 to 73 % in the two trials, compared to the
inoculated control). In contrast, prochloraz reduced disease by 7 % and
4 % in the two trials, compared to the control. These results suggest
that dry bubble disease can be controlled by the use of spent mushroom
substrate teas.

Abstract This study
assessed the application of an antibrowning solution using vacuum
impregnation (VI) and then electron-beam irradiation as a means to
extend the shelf life of sliced white button mushrooms (Agaricus bisporus).
A preliminary study helped to determine the best antibrowning solution
and VI process parameters. Mushroom slices were impregnated with 2 g/100
g ascorbic acid + 1 g/100 g calcium lactate; 2 g/100 g citric acid + 1
g/100 g calcium lactate; 1 g/100 g chitosan + 1 g/100 g calcium lactate;
and 1 g/100 g calcium lactate at different vacuum pressures and times
and atmospheric restoration times. Selection of the antibrowning
solution and VI parameters was based on texture and color of the
mushroom slices. Next, the slices were irradiated at 1 kGy using a
1.35-MeV e-beam accelerator. Physicochemical, sensory, and microbial
quality of mushrooms was monitored for 15 d at 4 °C. The best
impregnation process in this study was 2 g/100 g ascorbic acid and 1
g/100 g calcium lactate at 50 mm Hg for 5 min and an atmospheric
restoration time of 5 min. The control (untreated) samples suffered
structural losses throughout storage. Only the vacuum
impregnated-irradiated samples had acceptable color by the end of
storage. Sensory panelists consistently preferred the samples produced
with VI and irradiation because exposure to ionizing radiation inhibited
growth of spoilage microorganisms. Practical Application Extending
the shelf life of mushrooms is important for their marketing and
distribution and reliable preservation methods are still needed.
Treating sliced mushrooms with vacuum impregnation and electron-beam
irradiation introduces physiologically active components such as
beneficial antioxidants, vitamins, and cations, while assuring safety
and maintaining quality.

Pleurotus florida [P. ostreatus] was grown on
different substrates, i.e. paddy straw, sunflower head, sunflower stalk
and jackfruit rind. The weight of the different substrates was recorded
at 7, 14 and 21 days after inoculation. The highest weight loss was
observed in sunflower stalk at 7 days (1.73 g), 14 days (2.51 g) and 21
days (3.87 g) after spawning. The lowest weight loss was observed on
jackfruit rind at 7 days (1.16 g), 14 days (1.91 g) and 21 days (2.65 g)
after spawning. The highest yield (354 g/bag) and bio-efficiency (53.79
%) of P. florida was recorded in sunflower stalk, followed by
paddy straw and sunflower head. The lowest yield (89 g/bag) and
bio-efficiency (13.58%) of P. florida was observed on jackfruit rind.

Isolation and identification of Mycogone perniciosa,
causing wet bubble disease in Agaricus bisporus
cultivation in Kashmir
Button mushroom is an important edible fungus cultivated in
Kashmir, but it is often attacked by disease causing
organisms, including fungi, bacteria and viruses. Some of
them cause huge losses by reducing the yield significantly
or result in serious crop failures, depending upon the
severity and stage of appearance. One of the mycoparasite,
Mycogone perniciosa, the cause of wet bubble disease,
was observed in samples collected from mushroom farms of
three districts: Srinagar, Budgam and Pulwama of Kashmir
Valley. This fungal pathogen was constantly associated with
the disease and produced typical and characteristic symptoms
of wet bubble disease. Isolation of the pathogen was made
from diseased fruiting bodies. The pathogenicity proved in
accordance with the Koch’s postulates both in vivo as
well as in vitro. The pathogen was found to attack
button mushroom at all the growth stages but the immature
mushroom were found more susceptible than the mature ones,
and characteristic symptoms developed on all the inoculated
sporophores. The mushrooms were malformed with swollen
stipes and with deformed caps. The in vitro
interaction between Agaricus bisporus and M.
perniciosa mycelia indicated the hyphal collapse of the
former at the point of contact between the two fungi. There
was no zone of inhibition, found in this interaction.

For centuries,
mushrooms have been used as food and medicine in different cultures.
More recently, many bioactive compounds have been isolated from
different types of mushrooms. Among these, immunomodulators have gained
much interest based on the increasing growth of the immunotherapy
sector. Mushroom immunomodulators are classified under four categories
based on their chemical nature as: lectins, terpenoids, proteins, and
polysaccharides. These compounds are produced naturally in mushrooms
cultivated in greenhouses. For effective industrial production,
cultivation is carried out in submerged culture to increase the
bioactive compound yield, decrease the production time, and reduce the
cost of downstream processing. This review provides a comprehensive
overview on mushroom immunomodulators in terms of chemistry, industrial
